Tollot-Gros - Minervois

Anne Gros and Jean-Paul Tollot, 2 Burgundy winemakers, are combining their knowledge in different beautiful terroirs in Cazelles in Minervois.

The Gros-Tollot vineyard is located in «la Causse», one of the 5 distinct terroirs of the AOC Minervois, especially marked by its altitude which exceeds 200m to reach almost 500m. This results in greater drops in night-time temperatures and slower thermal warming in spring.

The other main characteristic of this area is the dominance of limestone soils allowing indirect warming of the vines and bunches.

Due to its altitude position, this zone is characterized by later and slow maturation. In the wines, often more lively than in other areas, the aromatic range is marked by freshness, the finish by tannins which can take 2 to 3 years to soften.

This philosophy is part of respect for traditions and the desire to innovate. The interest in respecting the biodiversity of the terroir allows us to create subtle, harmonious and elegant wines with substance, creaminess and fruit.

The wine making is for the most part quite modern in thermally regulated stainless steel barrels. The temperatures are constantly adjusted to the evolution of the fermentation and the taste. The “cuvaison” lasts 12 to 15 days. The leaking and pressing juice are assembled.
